Day 119

Today was a rainy day, and I had already decided to make it a rest day.  So instead of exercising, I decided to make my annual Butternut Squash/Apple soup.

Ingredients

2 containers of cut up butternut squash

2 apples 

1 onion

seasonings: salt, pepper, garlic, curry powder

vegetable soup broth (whole container)

1 cup almond milk

I cook all ingredients with vegetable broth til tender.  Combine and then using potato masher, mash all together.  I add the seasonings, then the almond milk.  I put that mixture in a slow cooker and cook for 3 to 4 hours.
